Three Favorite 1-minute Mug Cake Recipes / Vegan / Matcha, PB Chocolate, Vanilla + Bonus Lemon Flavor

People are going crazy about mug cakes? Why such popularity? Well, I think it is a convenient and easy way to make an indulgent dessert for breakfast. Also, mug cakes are super cute and require minimum cooking. Most of them need to be microwaved only for a minute. 

Today I am making three different versions of this popular breakfast. Also, I will show how easy it is to create a new flavor only by swapping one ingredient. This way, our last recipe actually yields one additional bonus flavor.

MATCHA MUG CAKE INGREDIENTS:

4 Tbsp all purpose flour

1/4 tsp baking powder

1 tsp matcha

1 Tbsp coconut sugar 

3 Tbsp nut milk

1/2 Tbsp vegetable oil

Microwave for 1 minute. 

 

PB CHOCOLATE MUG CAKE INGREDIENTS:

3 Tbsp pb powder

2 Tbsp chocolate protein powder

1/4 tsp baking powder

1 tsp cacao

1/4 C nut milk

a few drops of stevia (optional)

Microwave for 2 minutes. 

 

VANILLA MUG CAKE INGREDIENTS:

4 Tbsp all purpose flour

1/4 tsp baking powder

1-2 Tbsp coconut sugar 

1 tsp vanilla extract

3 Tbsp nut milk

1 Tbsp melted coconut (or any vegetable) oil

Microwave for 90 seconds. 

 

To make a LEMON MUG CAKE, skip vanilla extract and swap nut milk for 3 Tbsp of lemon juice in a previous recipe.
